Select ripe Pinot Grigio grapes from the vineyard. Ensure that they are free from blemishes and rot.

Harvesting the Grapes

Crush the grapes to release the juice. Use a wine press to extract the juice from the crushed grapes.

Crushing and Pressing

In a fermentation vessel, combine the grape juice with water, sugar, and wine yeast. Stir gently to mix. Cover the vessel with a clean cloth and allow it to ferment for about 2-3 weeks at a temperature of 15-20°C.

Fermentation

After fermentation, siphon the wine off the sediment into a clean container, leaving the sediment behind. This process is called racking and helps clarify the wine.

Racking

Allow the wine to age in a cool, dark place for at least 3 months. This helps develop its flavors.

Aging

Once aged, bottle the Pinot Grigio wine using sterilized bottles. If desired, add sulfur dioxide for preservation.

Bottling

Prior to serving, chill the bottle of Pinot Grigio in the refrigerator for at least 2 hours or in an ice bucket for 30 minutes.

Chilling the Wine

Fill wine glasses with ice cubes and place a fresh lemon slice on the rim of each glass.

Preparing the Glasses

Pour the chilled Pinot Grigio into the prepared glasses and serve immediately. Enjoy the refreshing, classic taste!
