White Rioja's most important grape, Viura, gives rise to this very light, refreshing snifter. Pairs pleasingly with coconut curry.

In a cocktail shaker, combine the Viura wine, coconut milk, fresh lime juice, and simple syrup.

Mixing the Cocktail

Fill the shaker with ice cubes and secure the lid.

Add Ice

Shake vigorously for about 15 seconds to combine and chill the mixture.

Shake Well

Strain the mixture into a chilled snifter glass.

Strain and Serve

Garnish with fresh mint leaves. Serve immediately.

In a large pot, heat the coconut oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.

Stir in the minced garlic and grated ginger, cooking for an additional 2 minutes until fragrant.

Add curry powder and cook for 1 minute, stirring constantly to release the spices' flavors.

Incorporate Spices

Pour in the coconut milk and vegetable broth, stirring to combine.

Add the mixed vegetables to the pot and bring the mixture to a simmer.

Season with salt and black pepper. Allow the curry to simmer for 15-20 minutes, until the vegetables are tender.

Season

Serve the coconut curry hot, garnished with fresh cilantro. Pair with the Viura cocktail for a perfect meal.
