Kernel Brewery take inspiration from timeworn porters that washed up in India. Notes of chocolate and coffee with ABV of approximately 5.5%.

In a large brewing pot, bring 6 liters of filtered water to a temperature of around 70°C (158°F).

Prepare the Water

In a separate container, combine Pale Malt, Chocolate Malt, Crystal Malt, and Roasted Barley. Crush the grains coarsely.

Malt Preparation

Once the water reaches the desired temperature, add the crushed grains to the pot and stir well. Maintain a temperature of 65°C (149°F) for 60 minutes.

Mashing the Grains

After mashing, sparge the grains with hot water to extract the sugars. Collect the wort in a separate pot.

Sparging

Bring the wort to a boil, then add 1 oz of Bittering Hops. Boil for 60 minutes, adding the Aroma Hops in the last 5 minutes of the boil.

Boiling the Wort

After boiling, cool the wort quickly to around 20°C (68°F) using a wort chiller or an ice bath.

Cooling the Wort

Once cooled, transfer the wort to a fermentation vessel and pitch the Ale Yeast.

Pitching the Yeast

Seal the fermentation vessel with an airlock and allow it to ferment at room temperature for about 2 weeks, or until fermentation is complete.

Fermentation Process

After fermentation is complete, add the coarsely ground coffee and cocoa powder to the beer. Stir gently and let it sit for another week.

Adding Coffee and Cocoa

Bottle the beer with priming sugar to carbonate, then seal and let it condition for an additional 1-2 weeks.
