Carefully hand-harvest the Pinot Meunier, Chardonnay, and Pinot Noir grapes from the vineyards. Ensure that the grapes are at optimal ripeness for the best flavor profile.

Hand Harvesting

Transport the freshly harvested grapes to the wine press. Gently press the grapes to extract the juice, ensuring minimal contact with the skins to avoid excessive tannin extraction.

Pressing the Grapes

Transfer the pressed juice into fermentation tanks. Allow the juice to ferment at controlled temperatures for approximately 2-3 weeks, monitoring the process closely for optimal flavor development.

Fermentation

After primary fermentation, carry out a secondary fermentation in the bottle. This is achieved by adding a small amount of sugar and yeast to the base wine before bottling.

Secondary Fermentation

Carefully fill the bottles with the wine and seal them using the corking machine. Ensure that each bottle is properly sealed to maintain the quality of the champagne.
