There is no mistaking the full-bodied, rich and powerful character. And yet there is velvet. Organic, biodynamic, obtainable for vegans.

Select ripe Syrah grapes, ensuring they are organic and biodynamic. Remove any stems and leaves, and wash the grapes gently under running water.

Harvesting

In a clean, sanitized container, crush the grapes by hand or using a grape crusher. Once crushed, press the grapes to extract the juice, collecting it in a fermentation vessel.

Crushing and Pressing

To the extracted juice, add 1 liter of water and 200 grams of organic sugar. Stir well until the sugar is completely dissolved.

Mixing Ingredients

Add 10 grams of yeast to the mixture and stir. Cover the fermentation vessel with a cloth and let it sit at room temperature for 7-14 days, stirring daily.

Fermentation

After fermentation, siphon the liquid into a new vessel, leaving sediment behind. Add 50 grams of organic oak chips to enhance flavor.

Racking

Dissolve 10 grams of bentonite clay in a small amount of water and add it to the wine to help clarify. Allow to sit for another 2 weeks.

Fining

Add 1 gram of potassium metabisulfite to the wine for preservation and to prevent spoilage.

Stabilization

After the wine has clarified, siphon it into clean bottles, leaving some space at the top. Seal the bottles with caps or corks.

Bottling

Store the bottles in a cool, dark place for at least 6 months to allow the flavors to develop and mature.
