Strawberry Shake

Enjoy a creamy and refreshing regular-sized strawberry shake made with ripe strawberries and smooth vanilla ice cream.

White Rioja's most important grape, Viura, gives rise to this very light, refreshing snifter.

Harvest the Viura grapes when they are ripe. Remove stems and crush the grapes to release the juice.

Harvesting and Preparation

Press the crushed grapes to extract as much juice as possible. Collect the juice in a clean fermentation container.

Juicing

Add water to the juice, then mix in the sugar and yeast. If desired, add tannin and citric acid for added complexity. Cover the container with a clean cloth and let it ferment in a cool, dark place for about 2-3 weeks, stirring occasionally.

Fermentation

Once fermentation is complete, siphon the wine off the sediment into a clean container, being careful not to disturb the sediment.

Racking

Let the wine age for at least 3-6 months in a cool, dark place. Taste periodically to check for flavor development.

Aging

Once the wine has aged to your liking, bottle it in clean, sterilized bottles. Seal with corks and store.
