In a large pot, heat 12 cups of water to around 160°F (71°C). Add the pale malt and caramel malt, stirring well. Maintain the temperature for 60 minutes.

Mash the Grains

After mashing, bring the mixture to a boil. Once boiling, add Citra hops and boil for 30 minutes. Then add Cascade hops and boil for an additional 15 minutes.

Boil the Wort

After boiling, cool the wort quickly using a wort chiller or an ice bath until it reaches around 70°F (21°C).

Cool the Wort

Transfer the cooled wort to a sanitized fermentation vessel. Add the yeast, seal it, and allow it to ferment at room temperature for about 1-2 weeks.

Fermentation

Once fermentation is complete, dissolve the priming sugar in a small amount of water and add it to the beer before bottling. Bottle the beer and seal tightly.

Bottling

Let the bottles sit at room temperature for another 1-2 weeks for carbonation. After that, refrigerate and enjoy your Collider Unwind Session IPA!
