Crush the organic Garganega grapes in a large bowl and add sugar and water. Stir until sugar dissolves. Add yeast and mix well. Cover and let it ferment for 3-5 days at room temperature.

After fermentation, strain the mixture through a fine mesh sieve into a clean container, discarding the solids.

Stir in the lemon juice to the strained liquid and mix well.

Add Lemon Juice

Bottle the liquid, leaving some space at the top. Seal the bottles and let them carbonate at room temperature for another 1-2 days.

Carbonate

Chill the bottles in the refrigerator. When ready to serve, pour into glasses, top with sparkling water to taste, and garnish with fresh mint leaves and lemon slices.
