Method

Chole Preparation

1

Cook the Chickpeas

In a pressure cooker, add soaked chickpeas with enough water and cook for about 3 whistles or until tender. Set aside.

2

Prepare the Masala

In a pan, heat oil or ghee. Add cumin seeds, and when they splutter, add chopped onions. Sauté until golden brown.

3

Add Tomatoes and Spices

Add chopped tomatoes, ginger-garlic paste, green chili, turmeric, coriander powder, chole masala, and salt. Cook until the tomatoes are soft.

4

Combine with Chickpeas

Add the cooked chickpeas to the masala, mix well, and let it simmer for 10 minutes. Garnish with fresh coriander.

Puri Preparation

5

Make the Dough

In a bowl, mix whole wheat flour and salt. Add water gradually and knead into a soft dough. Cover and let it rest for 20 minutes.

6

Roll and Fry

Divide the dough into small balls, roll them out into small circles, and deep fry in hot oil until they puff up and turn golden brown.

Halwa Preparation

7

Roast Semolina

In a pan, heat ghee and add semolina. Roast until it turns golden brown, stirring continuously.

8

Cook Halwa

Add water, sugar, and cardamom powder to the roasted semolina. Cook until it thickens and water is absorbed. Stir in chopped nuts.
