Prepare the Potato Filling

Boil, peel, and mash the potatoes in a large bowl.

Spice it Up

In a pan, heat oil and add mustard seeds. Once they splutter, add green chilies, ginger, and garlic. Sauté for a minute.

Mix Ingredients

Add turmeric powder, coriander powder, garam masala, and salt to the pan. Mix well, then add the mashed potatoes and combine thoroughly.

Shape the Vadas

Let the mixture cool slightly, then shape it into small balls (vada).

Fry the Vadas

Heat oil in a deep pan over medium heat. Fry the vadas until golden brown and crispy. Drain on paper towels.

Assemble the Vada Pau

Slice the pau buns horizontally, place a fried vada inside each bun, and add chutney and chopped coriander, if desired.
