Preheat your smoker to 225°F (107°C).
Place the wings on the smoker racks and smoke for 1.5 to 2 hours, until they reach an internal temperature of 165°F (74°C).
For extra crispiness, you can finish the wings on a hot grill for about 5 minutes per side or place them under a broiler for 3-5 minutes, watching carefully to avoid burning.
Toss the smoked wings in your choice of sauce, such as buffalo, BBQ, or honey garlic.
Serve immediately with your favorite dipping sauce and celery sticks.
