1. Prepare the Wings

In a large bowl, combine chicken wings with olive oil, salt, black pepper, garlic powder, and smoked paprika. Toss until wings are evenly coated.

2. Preheat the Smoker

Preheat your smoker to 225°F (107°C).

3. Smoke the Wings

Place the wings on the smoker racks and smoke for 1.5 to 2 hours, until they reach an internal temperature of 165°F (74°C).

4. Crisp the Wings

For extra crispiness, you can finish the wings on a hot grill for about 5 minutes per side or place them under a broiler for 3-5 minutes, watching carefully to avoid burning.

5. Toss in Sauce

Toss the smoked wings in your choice of sauce, such as buffalo, BBQ, or honey garlic.

6. Serve

Serve immediately with your favorite dipping sauce and celery sticks.
