    Prepare steak and bacon

    If your steak and bacon are not already cooked, sear a 6–8 oz steak to medium-rare/medium (about 3–4 minutes per side depending on thickness), let rest 5 minutes, then thinly slice against the grain. Cook bacon until crisp and chop. If using leftover steak, slice thinly. Measure 6 oz sliced steak and chop bacon into small pieces.

    Sauté aromatics and warm steak

    Heat a small skillet over medium heat and add 1/2 tsp neutral oil. Add the diced onion and bell pepper and sauté until softened and translucent, about 3–4 minutes. Add the sliced steak and warm through for 1–2 minutes so juices redistribute. Remove from heat and stir in chopped bacon and 3/4 cup of the shredded cheddar. Keep warm while you make the omelet.

Egg Mixture

    Crack 4 large eggs into a medium bowl. Add 2 tablespoons milk or half-and-half, 1/2 teaspoon salt, and 1/4 teaspoon freshly ground black pepper. Whisk vigorously until the mixture is uniform in color and slightly frothy (about 20–30 seconds). This produces a tender, slightly airy omelet.

    Preheat pan and melt butter

    Place a 10-inch nonstick or well-seasoned skillet over medium-low to medium heat. Add 1 1/2 tablespoons unsalted butter and let it melt and foam but not brown. Swirl the pan to coat evenly.

    Cook the eggs

    Pour the whisked eggs into the hot skillet. Let them sit undisturbed for 10–15 seconds until the edges begin to set. Using a silicone spatula, gently push the set edges toward the center while tilting the pan so uncooked egg runs to the edges. Continue this gentle motion until the surface is mostly set but still slightly glossy on top (about 1–2 minutes total).

    Add filling

    Spoon the warm steak, bacon, onion, pepper, and cheese mixture onto one half of the omelet in an even layer. Sprinkle the remaining 1/4 cup shredded cheddar and chopped fresh chives over the filling.

    Fold and finish

    Using the spatula, carefully fold the empty half of the omelet over the filled half. Let the omelet cook another 30–60 seconds to allow cheese to melt and filling to settle. If you prefer the inside more set, cover the pan briefly for 20–30 seconds. Slide the omelet onto a plate seam-side down.

    Dot the omelet with the optional hot sauce if desired and sprinkle with chopped parsley or extra chives. Serve immediately with toast, home fries, or a simple salad.
