Prepare eggs
Crack 2 large eggs into a small bowl, add 1 tablespoon whole milk, 1 teaspoon salt, and 1/4 teaspoon black pepper. Whisk until blended and slightly frothy.

Toast bread
Heat a nonstick skillet over medium heat. Spread 1 tablespoon butter on both slices of bread (or one side each). Place bread butter-side-down on the skillet and toast until golden, about 1–1.5 minutes per side. Remove and set aside.

Cook eggs
Lower heat to medium-low and add 1 tablespoon butter to the skillet. Pour the whisked eggs into the pan. Let sit 10–15 seconds, then gently stir with a rubber spatula, scraping the bottom and folding eggs until softly set but still moist, about 1–2 minutes total. Remove from heat just before fully set; residual heat will finish them.

Assemble sandwich
Spread 1 teaspoon mayonnaise onto one toasted bread slice. Place 2 lettuce leaves and 2 tomato slices on the mayo. Spoon the scrambled eggs on top, season lightly with an extra pinch of salt and pepper if desired, and add a few drops of hot sauce if using. Top with the second toasted slice. Cut sandwich in half and serve immediately.

Cook the meat
Heat 1 teaspoon vegetable oil in a skillet over medium-high heat. Add 2 tablespoons finely chopped onion and 1/2 teaspoon minced garlic; sauté 30–45 seconds until fragrant. Add 100 g ground beef (or pork), breaking it up with a spatula. Cook until well browned, about 4–5 minutes. Stir in 1 teaspoon soy sauce and 1/4 teaspoon ground black pepper. Taste and adjust seasoning. Remove meat to a plate and wipe the pan clean if excess fat remains.

Fry the egg
In the same skillet over medium heat, add a little oil or a light smear of butter if needed. Crack 1 large egg into the pan and fry to preference: sunny-side up (white set, yolk runny) about 2–3 minutes, or over-easy about 2 minutes per side. For a fully set yolk, cook 3–4 minutes per side. Lightly season with salt and pepper.

Toast bread and melt cheese
While the egg finishes, spread 1 tablespoon butter on both slices of bread and toast in a separate pan or the same skillet until golden. Immediately place the cheese slice on one hot toasted piece so it starts to melt.

Assemble sandwich
Spread 1 teaspoon mayonnaise on the other toasted slice. Place the cheese-topped bread slice down, add the cooked seasoned ground meat in a compact layer, then place the fried egg on top. Add pickles if using. Top with the mayo-spread slice, cut in half, and serve hot.
