    Beat eggs

    Crack the 2 large eggs into a medium bowl. Add 1 tablespoon whole milk, 1 teaspoon kosher salt, and 1/4 teaspoon freshly ground black pepper. Whisk vigorously until mixture is fully blended and slightly frothy (about 20–30 seconds).

    Heat pan

    Place a nonstick or well-seasoned 8-inch skillet over medium heat. Add 1 tablespoon unsalted butter and swirl until the butter foams but doesn’t brown (about 30–45 seconds). Reduce heat to medium-low.

    Cook eggs

    Pour the beaten eggs into the skillet and let sit undisturbed for 10–15 seconds until edges begin to set. Using a silicone spatula, gently push set edges toward the center while tilting the pan to allow uncooked egg to flow to the edges. Continue for 30–45 seconds until the top is mostly set but still slightly glossy.

    Prepare selected filling

    Select one filling from the Fillings list. Prepare as follows before finishing the omelet: - Bacon: cook in a skillet over medium heat until crisp, drain on paper towel and chop into bite-size pieces (about 6–8 minutes). - Portuguese sausage: slice 1/4-inch thick and cook in skillet over medium heat until browned and heated through (3–4 minutes per side). - Luncheon meat: dice and pan-fry in a tablespoon of oil until edges are crisped (3–4 minutes). - Pork links: cook according to package (pan-fry or grill), then slice into 1/4-inch rounds. - Corned beef hash: break up and heat in skillet until warmed and slightly crisped (4–5 minutes). - Ham steak: dice and sauté until edges brown (2–3 minutes).

    Add filling to omelet

    Once the omelet surface is mostly set, place your prepared filling in a line across one half of the omelet (use roughly 2 ounces or the prepared amount specified). Sprinkle the chopped scallions (1 tablespoon) over the filling. If you like, add a light drizzle of hot sauce or a smear of ketchup on the rice side later.

    Fold and finish

    Using the spatula, gently fold the empty half of the omelet over the filling to form a semicircle. Let cook for 15–30 seconds more to finish cooking the interior (reduce heat to low if necessary). Tilt the pan and spoon a little butter or pan juices over the top for gloss, if desired.

Accompaniments & plating

    Warm the 1/2 cup steamed white rice if it isn’t hot. Transfer the folded omelet to a plate next to the rice. Garnish the rice with a light sprinkle of chopped scallions and serve with optional hot sauce or ketchup on the side.
