Method
Prepare Lobster Filling
Cook Lobster
If using live lobster, boil in salted water for 8-10 minutes until cooked. Remove and cool. If using pre-cooked lobster, skip this step.
Make Brown Butter
In a pan, melt 4 tablespoons of unsalted butter over medium heat. Cook until it turns golden brown and has a nutty aroma. Be careful not to burn it.
Mix Ingredients
In a bowl, combine lobster meat, brown butter, lemon juice, mayonnaise, salt, pepper, and chopped chives. Mix gently to combine.
Prepare Brioche Rolls
Toast Rolls
Spread 2 tablespoons of unsalted butter on the outside of the brioche rolls. Heat a skillet over medium heat and toast the rolls until golden brown on both sides.
Serve
Assemble Lobster Roll
Place a generous portion of the lobster filling into each toasted brioche roll. Serve immediately with French fries and coleslaw on the side.
