Peach Puree (if making fresh)

Blanch and peel (optional)

If using fresh peaches with skins you want removed, score an X in the peach base, dip in boiling water for 20–30 seconds, then transfer to ice water. The skin should slip off easily.

Place peeled, pitted, chopped peach in a blender with 1 teaspoon sugar (optional) and 1–2 tablespoons hot water if peaches are very dense. Purée until smooth. Strain through a fine-mesh sieve for an ultra-smooth texture if desired. Measure out 1 oz of puree per cocktail.

Fill a cocktail shaker with ice (about 3/4 full).

Add 2 oz Tito's Handmade Vodka, 1 oz peach puree, 1/2 oz fresh lemon juice, and 1/2 oz simple syrup to the shaker.

Shake vigorously for 10–15 seconds until well chilled and slightly frothy.

Strain the mixture into a chilled highball or Collins glass filled with fresh ice (large cube or crushed, depending on preference).

Top gently with 2 oz dry sparkling water or club soda to add refreshing bubbles and a light finish.

Give the drink one gentle stir (1–2 rotations) to integrate the bubbles without flattening them.

Garnish & Finish

Express a lemon twist over the drink to release oils, then rim the glass lightly with the twist and drop it in.

Slide a fresh peach slice onto the rim or float it on top, and add a mint sprig for aroma if using.
