Maker's Demerara Smash

Muddle and shake

In a mixing glass or shaker, place 8 fresh mint leaves and 0.5 oz fresh lime juice. Add 0.5 oz demerara syrup. Gently muddle the mint with the liquids just enough to release aroma—do not pulverize. Add 1.5 oz Maker's Mark and fill the shaker with crushed ice (about 1 cup).

Shake and strain

Shake vigorously for 10–12 seconds until the outside of the shaker is frosty. Double-strain into a rocks glass filled with fresh crushed ice to remove mint particles.

Garnish

Slap a mint sprig between your palms to release oils and garnish the drink. Set aside or serve immediately as part of the flight of cocktails.

Blanco Strawberry Paloma

Prepare strawberry purée (if not ready)

If you don't have purée ready, blend 3–4 hulled strawberries until smooth and strain through a fine sieve to yield 1 oz purée. Measure 1 oz for one cocktail.

Build and shake

In a shaker, combine 1.5 oz Blanco tequila, 1 oz strawberry purée, 1 oz fresh grapefruit juice, 0.5 oz fresh lime juice, and 0.25 oz demerara syrup. Add ice cubes to fill the shaker roughly 3/4 full (about 1 cup). Shake vigorously for 10–12 seconds until well chilled.

Strain

Double-strain into a highball or Collins glass filled with fresh ice. If you prefer a slightly longer drink, top with 1 oz soda or sparkling water.

Garnish

Garnish with a grapefruit wedge or a thin strawberry slice on the rim.

Sparkling Rosé Tequila Fizz (final topper)

Top with sparkling rosé

Immediately before serving (for both cocktails or for one combined presentation), gently pour 2 oz chilled sparkling rosé over the back of a bar spoon into each glass to create a light fizz and a layered appearance. Pour slowly to avoid excessive foaming.

Final touch and serve

If presenting as a single composed cocktail, use the Maker's Smash as a small pour in the glass first, add the Blanco Strawberry components, and finish with the sparkling rosé. Otherwise serve each cocktail separately, sparkling rosé poured over each. Garnish with the prepared strawberry slice and serve immediately.
