Cocktail

2 oz White rum (or Malibu coconut rum for coconut-flavored variation)1 oz Passion fruit purée3 oz Pineapple juice1/2 oz Fresh lime juice1/4 oz Simple syrup (adjust to taste)1 cup Ice (cubed)

Garnish

1 piece Pineapple wedge1/2 piece Passion fruit seeds or half passion fruit (optional)1 sprig Mint sprig (optional)

Method

Cocktail

Build and shake

Add white rum (or Malibu coconut rum), passion fruit purée, pineapple juice, fresh lime juice and simple syrup into a cocktail shaker filled halfway with ice. Seal and shake vigorously for 10–15 seconds until the outside of the shaker feels cold.

Strain and serve

Fill a highball or Collins glass with fresh ice. Double-strain the shaken mixture into the glass to remove pulp and ice shards (use a fine mesh strainer if available).

Garnish

Thread a pineapple wedge on the rim and float half a passion fruit or a spoonful of passion fruit seeds on top for visual appeal. Add a mint sprig if desired. Serve immediately with a straw.
