Prepare Cocktail
Dry shake
If using the egg white for a silky foam, add the rye, gin, aperol, lemon juice, simple syrup, orange bitters, angostura bitters and egg white to a cocktail shaker (no ice). Seal and shake vigorously for 15–20 seconds to emulsify and create foam.
Wet shake
Add ice to the shaker (about 6 large cubes). Shake hard for 12–15 seconds until the shaker is very cold to the touch and slightly frosted.
Double strain
Double-strain the cocktail into a chilled coupe or Nick & Nora glass using a Hawthorne strainer and a fine mesh strainer to catch small ice shards and egg white solids. The finished drink should be silky with a pale amber hue and a light foam (if egg white used).
Garnish & serve
Express the oils of the lemon twist over the surface of the drink by holding it over the cocktail and pinching so the oils spray onto the foam/ surface. Run the twist around the rim and drop it into the drink or lay it on the edge. Optionally float a dehydrated orange wheel or a cherry on the surface for visual flair. Serve immediately.
