Season and Brown
Pat beef cubes dry with paper towel. Toss with salt, pepper and flour until evenly coated. Heat a large Dutch oven or heavy-bottomed pot over medium-high heat and add vegetable oil. When oil is shimmering, add beef in a single layer (work in batches if needed) and brown on all sides, about 6–8 minutes per batch. Remove browned beef and set aside.

Deglaze and Braise
Stir in tomato paste and cook 1 minute. Add chopped chipotle in adobo and dried oregano, stirring to combine. Pour in beef stock and scrape up any browned bits from the bottom of the pot. Return the browned beef and any accumulated juices to the pot. Add bay leaf. Bring to a gentle simmer, then reduce heat to low, cover partially, and braise until beef is very tender and shreds easily, 2 to 2.5 hours. Check once around the 1.5-hour mark and add up to 0.5 cup additional stock or water if the liquid is too low.

Shred and Concentrate
When beef is fork-tender, remove bay leaf. Use two forks to shred the meat in the braising liquid, then simmer uncovered over medium-low heat for 8–12 minutes to reduce and concentrate the sauce to a thick, saucy consistency. Adjust seasoning with additional salt and pepper to taste. Keep warm until assembly.

While beef braises, whisk together mayonnaise, sour cream, adobo from chipotles, hot sauce, lime juice, smoked paprika, honey, and salt in a small bowl until smooth and slightly thin but spreadable. Taste and adjust heat or acidity as desired (add more adobo or hot sauce to increase spice, more lime for brightness). Refrigerate until ready to use. The sauce can be made up to 2 days ahead.

Warm tortillas: heat a cast-iron skillet over medium-high heat. Lightly brush each tortilla with a little oil or butter and warm 20–30 seconds per side until pliable and slightly charred at the edges. Keep warm wrapped in a clean towel.

Fill the tortillas: divide shredded braised beef evenly among 4 warmed tortillas (about 2 tacos per order = 4 tortillas total). Spoon 1 to 1.5 tablespoons Le Rev spicy sauce over the meat on each taco.

Top and finish: sprinkle finely diced white onion (about 1 tablespoon per taco), chopped cilantro (about 1 tablespoon per taco), and crumbled Cotija cheese over each taco. Serve with lime wedges for squeezing over the tacos.

Optional serving suggestion: Serve immediately while warm. Leftover braised beef keeps 3–4 days refrigerated; reheat gently with a splash of beef stock to restore moisture.
