Prepare Green Tea

Boil water and steep the green tea leaves for 3-5 minutes. Strain and let it cool to room temperature.

Make Tomato Water Gin

Blend fresh tomatoes and strain them through a fine mesh sieve or cheesecloth to extract the tomato water. Mix with gin in a 1:1 ratio and chill.

Combine Ingredients

In a mixing glass filled with ice, pour the sake, chilled tomato water gin, and quinquina. Stir gently for about 15 seconds until well chilled.

Add Green Tea

Strain the mixture into a chilled glass and top with the prepared green tea. Stir gently to combine.

Optionally, garnish with a sprig of fresh herbs like basil or a slice of tomato for added flavor and presentation.
