Preparing the Pretzels
Activate the Yeast
In a large bowl, combine the warm water, sugar, and yeast. Let it sit for about 5 minutes until it becomes frothy.
Make the Dough
Add the flour and salt to the yeast mixture. Mix until a dough forms. Knead on a floured surface for about 5-7 minutes until smooth.
First Rise
Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
Shape the Pretzels
Preheat the oven to 450°F (232°C). Punch down the dough and divide it into 8 equal pieces. Roll each piece into a long rope and twist into a pretzel shape.
Baking Soda Bath
Bring a large pot of water to a boil and add the baking soda. Boil each pretzel for about 30 seconds on each side, then remove and place on a baking sheet lined with parchment paper.
Bake the Pretzels
Sprinkle the pretzels with coarse sea salt and bake for 12-15 minutes or until golden brown.
Cool and Serve
Allow the pretzels to cool slightly before serving with beer cheese.
