Prepare the Fries
Peel and cut the potatoes into thick fries. Soak in cold water for at least 30 minutes, then drain and pat dry.
Prepare the Fish
In a shallow bowl, mix flour with salt and pepper. In another bowl, beat the eggs. In a third bowl, place the panko breadcrumbs.
Batter the Fish
Dredge each cod fillet in the flour mixture, dip in the egg, then coat with panko breadcrumbs.
Fry the Fish
In the same pot, heat more vegetable oil to 350°F (175°C). Fry the battered cod fillets until golden and cooked through, about 4-5 minutes per side. Drain on paper towels.
Make the Slaw
In a large bowl, combine the coleslaw mix, mayonnaise, salt, and pepper. Mix well to combine.
Prepare the Drive-In Sauce
In a small bowl, mix together mayonnaise, ketchup, Worcestershire sauce, and hot sauce. Adjust seasoning to taste.
Serve
Plate the fish and chips with a side of slaw and drive-in sauce for dipping.
