    Prepare the Meatloaf

    Preheat your oven to 350°F (175°C). In a large bowl, combine ground beef, ground pork, diced hatch green chiles, chopped onion, minced garlic, eggs, panko breadcrumbs, salt, and black pepper. Mix until just combined.

    Shape the Meatloaf

    Transfer the meat mixture to a loaf pan or shape it into a loaf on a baking sheet. Bake in the preheated oven for 45-50 minutes.

    Make the Glaze

    While the meatloaf is baking, combine mango puree, minced chipotle, brown sugar, and apple cider vinegar in a small saucepan. Simmer over medium heat for 5-7 minutes until slightly thickened.

    Glaze the Meatloaf

    Remove the meatloaf from the oven and brush the mango-chipotle glaze over the top. Return to the oven and bake for an additional 10-15 minutes.

    Prepare the Mash

    While the meatloaf finishes baking, boil Yukon gold potatoes in salted water until tender, about 15-20 minutes. Drain and mash with butter and milk until creamy.

    Cook the Vegetables

    Steam or sauté the seasonal vegetables until tender, about 5-7 minutes.

    Serve

    Once the meatloaf is done, let it rest for a few minutes before slicing. Serve with Yukon gold mash, seasonal vegetables, and top with shoestring onions.
