    Prepare the Meatloaf

    Preheat your oven to 350°F (175°C). In a large bowl, combine ground beef, ground pork, diced hatch green chiles, breadcrumbs, egg, chopped onion, minced garlic, salt, pepper, and paprika. Mix until just combined.

    Shape and Glaze

    Transfer the meat mixture into a loaf pan and shape it into a loaf. Brush the top with the mango-chipotle sauce. Bake in the preheated oven for about 60 minutes or until the internal temperature reaches 160°F (70°C).

    Make the Mashed Potatoes

    While the meatloaf is baking, boil the Yukon gold potatoes in salted water until tender, about 15-20 minutes. Drain and return to the pot. Add butter and milk, then mash until smooth. Season with salt to taste.

    Prepare Seasonal Vegetables

    In a separate pot, steam or sauté the seasonal vegetables until tender, about 5-7 minutes.

    Serve

    Once the meatloaf is done, let it rest for 10 minutes before slicing. Serve slices alongside the mashed potatoes and seasonal vegetables, topped with additional mango-chipotle glaze if desired, and sprinkle with shoestring onions.
