    Prepare the Potatoes

    Peel and chop the Yukon Gold potatoes into chunks. Place them in a pot of salted water, bring to a boil, and cook until tender (about 15-20 minutes). Drain and mash with a stick of butter, salt, and pepper.

    Cook the Asparagus

    While the potatoes are cooking, rinse the asparagus and trim the ends. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the asparagus, season with salt and pepper, and sauté for about 5-7 minutes until tender.

    Make the Compound Butter

    In a small bowl, mix the softened butter with minced garlic, chopped parsley, salt, and pepper. Shape it into a log using plastic wrap and refrigerate until firm.

    Cook the Steak

    Season the prime flat iron steak with salt and black pepper. Heat 1 tablespoon of olive oil in a skillet over high heat. Sear the steak for 4-5 minutes on each side for medium-rare, or until your desired doneness. Let it rest for 5 minutes before slicing.

    Serve

    Plate the mashed potatoes, top with the sliced steak, and add the sautéed asparagus on the side. Finish with a slice of the compound butter on top of the steak.
