Prepare the Filling
In a large bowl, combine ground pork, green onions, shredded cabbage, minced garlic, grated ginger, soy sauce, and sesame oil. Mix until well combined.

Fill the Wrappers
Take a potsticker wrapper and place about 1 tablespoon of filling in the center. Moisten the edges with water, fold the wrapper in half, and press to seal. Repeat with remaining wrappers and filling.

Cook the Potstickers
Heat vegetable oil in a large skillet over medium heat. Place the potstickers in the skillet, flat-side down, and cook until golden brown, about 3-4 minutes.

Steam the Potstickers
Add 1/4 cup of water to the skillet and immediately cover with a lid. Steam the potstickers for about 5-7 minutes or until the water has evaporated.

Serve
Serve the potstickers hot with a drizzle of dark soy glaze and a side of sriracha sweet chile mayo for dipping.
