    Prepare the Filet

    Season the filet mignon with salt and black pepper. Heat a skillet over medium-high heat and add olive oil. Sear the filet mignon for about 4-5 minutes on each side for medium-rare. Remove from skillet and let rest.

    Sauté the Vegetables

    In the same skillet, add sliced red bell pepper, red onion, mushrooms, and jalapeño. Sauté for about 5-7 minutes until softened. Season with salt and pepper.

    Make the Red Wine Au Jus

    In a separate saucepan, combine red wine and beef broth. Bring to a simmer and reduce by half, about 10-15 minutes. Season with salt and pepper.

    Assemble the Sandwich

    Slice the rested filet mignon thinly. On a sub roll or hoagie, layer the sliced steak, sautéed vegetables, and provolone cheese. Drizzle with roasted garlic aioli.

    Serve the cheesesteak with a side of thin-cut fries and the red wine au jus for dipping.
