    Prepare the Hummus

    If you're making house-made hummus, combine chickpeas, tahini, garlic, lemon juice, olive oil, and salt in a food processor. Blend until smooth and creamy. Adjust seasoning to taste.

    Prepare the Feta Mixture

    In a bowl, crumble the Tucumcari mountain feta cheese. Drizzle in the lavender honey and mix gently until combined. Season with fresh-cracked pepper to taste.

    Prepare the Vegetables and Fruits

    Wash and cut the assorted fresh vegetables into sticks or bite-sized pieces. Rinse the grapes and remove stems. Arrange the olives in a serving dish.

    Assemble the Platter

    On a large serving platter, place the hummus in the center. Surround it with the feta mixture, fresh vegetables, grapes, and olives. Add the pita bread on the side, either whole or cut into triangles.
