    Prepare the Onions

    In a large pot, melt the butter over medium heat. Add the sliced onions and cook, stirring frequently, until they are caramelized and golden brown, about 30-40 minutes.

    Add Garlic and Wine

    Stir in the minced garlic and cook for another minute. Pour in the Merlot wine and scrape the bottom of the pot to release any browned bits. Let the wine simmer for about 5 minutes.

    Simmer the Soup

    Add the beef broth, bay leaves, thyme, salt, and pepper to the pot. Bring to a boil, then reduce the heat and let it simmer for 30 minutes.

    Prepare the Crostini

    While the soup is simmering, preheat your oven to 400°F (200°C). Brush the sliced baguette with olive oil and place on a baking sheet. Bake for about 10 minutes or until golden and crisp.

    Serve the Soup

    Remove the bay leaves from the soup. Ladle the hot soup into oven-safe bowls, top each with a few crostini and a generous amount of Swiss cheese. Place the bowls on a baking sheet and broil in the oven until the cheese is bubbly and golden, about 3-5 minutes.
