Prepare the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold sparkling water until the batter is smooth and slightly thick.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Cook the Fish
Dip each haddock fillet into the batter, allowing excess to drip off. Carefully place the battered fish into the hot oil and fry for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

Fry the Fries
In the same oil, fry the thin-cut fries in batches until they are crispy and golden brown, about 3-4 minutes. Remove and drain on paper towels, seasoning with salt to taste.

Serve
Plate the fried fish alongside the crispy fries. Serve with lemon-basil aioli on the side for dipping.
