    Prepare the Cream Mixture

    In a saucepan, combine the heavy cream, 1 cup of granulated sugar, and the vanilla bean (split and scraped). Heat over medium heat until just boiling, then remove from heat and let steep for 15 minutes.

    Mix Egg Yolks

    In a mixing bowl, whisk together the egg yolks and a pinch of salt until well combined.

    Combine Mixtures

    Slowly pour the warm cream mixture into the egg yolks, whisking continuously to temper the yolks.

    Bake

    Preheat your oven to 325°F (160°C). Pour the custard mixture into ramekins and place them in a baking dish. Fill the baking dish with hot water until it reaches halfway up the sides of the ramekins. Bake for 30-35 minutes or until the custard is set but still slightly jiggly in the center.

    Cool

    Remove the ramekins from the water bath and let them cool to room temperature. Then refrigerate for at least 2 hours, or overnight.

    Caramelize Sugar

    Before serving, sprinkle about 1 tablespoon of granulated sugar on top of each custard. Using a kitchen torch, caramelize the sugar until it forms a crisp, golden crust. Alternatively, you can place the ramekins under a broiler for 1-2 minutes, watching closely to avoid burning.

    Let the caramelized sugar cool for a minute before serving. Enjoy your homemade crème brûlée!
