Prep vegetables

Wash and dry cauliflower florets, slice the potato thinly (or julienne), thinly slice the onion, and roughly chop the spinach or fenugreek leaves. Pat vegetables dry with a towel so excess moisture doesn't make the batter too thin.

Combine dry batter ingredients

In a large mixing bowl, sift or whisk together 2 cups chickpea flour, 2 tablespoons rice flour (if using), 1/2 tsp turmeric, 1/2 tsp red chili powder, 1 tsp cumin seeds, 1/4 tsp ajwain (if using), 1/4 tsp garam masala and 1.5 tsp salt until evenly combined.

Add aromatics and herbs

Add the grated ginger, minced garlic (if using), finely chopped green chili, and 2 tablespoons chopped cilantro into the dry mixture and toss so the aromatics are evenly distributed in the flour.

Make thick batter

Gradually add about 1/2 cup cold water to the dry mix, stirring with a spoon to form a thick, lump-free batter that will coat vegetables rather than become runny. If batter seems too thick to coat, add up to 2–3 tablespoons more water. If using baking soda, sprinkle 1/8 tsp into the batter and mix in right before frying.

Coat vegetables

Add the prepared cauliflower, potato slices, sliced onion, and chopped spinach to the batter. Use your hands or a spoon to toss until all pieces are well coated with an even layer of batter. Let sit 3–5 minutes to allow the flour to adhere.

Frying & Finishing

Heat oil

Pour about 2–3 cups vegetable oil into a deep, heavy pot or kadai and heat over medium-high until the oil reaches 350°F (175°C) or a drop of batter sizzles and rises to the surface immediately. Maintain medium heat to avoid burning.

Test fry

Drop a small spoonful of batter into the oil to test. If it browns in 45–60 seconds and crisps up without burning, oil temperature is correct. Adjust heat if necessary.

Fry pakoras in batches

Using tongs or a slotted spoon, drop small portions (about 1–2 tablespoons-sized clusters) of the coated vegetables into the hot oil, taking care not to overcrowd the pot. Fry 2–3 minutes per batch, turning occasionally, until pakoras are golden brown and crisp. Remove with a slotted spoon and drain on a paper towel-lined tray. Repeat with remaining batter and vegetables.

Drain and season

While hot, optionally sprinkle a pinch of salt over the pakoras. Let pakoras rest 2 minutes to set; they will crisp further as they cool slightly.

Serve pakoras hot with tamarind chutney or mint-coriander chutney and lemon wedges on the side.
