Prepare bread and spreads
Lightly toast all 12 slices of bread until just golden at the edges but still soft in the center (about 1–2 minutes per side in a skillet or 2–3 minutes in a toaster). Spread approximately 2 teaspoons of softened butter on one side of 6 slices (these will be the outer faces). In a small bowl, mix the mayonnaise and Dijon mustard together; spread about 1 tablespoon of the mayo-mustard mixture on the unbuttered side of the remaining 6 slices (these will contact the fillings). Reserve any extra spread for serving.
Prepare produce
Slice the tomatoes into 1/4-inch thick slices (about 8–12 slices from 2 medium tomatoes). Season tomato slices lightly with half of the kosher salt and half of the black pepper. Separate and pat dry 8 lettuce leaves. Set aside.
Layer meats and cheese
On three of the bread slices that have the mayo side up, build the lower tiers: On the first mayo slice add 4 ounces (about one-third of the turkey) neatly folded to cover the slice, then top with two slices of cheddar. On the second mayo slice add half of the ham (about 4 oz) folded to cover. On the third mayo slice add remaining turkey (4 oz) and two slices of cheese if desired. If using only three sandwich stacks, plan layers so each sandwich has meat on both tiers (see assembly step).
Assemble triple-decker sandwiches
Place a buttered slice (butter side out) on top of each prepared mayo-topped slice to form the first deck. On that buttered slice (which is now the top of the first deck), spread a thin smear (about 1 tsp) of mayo-mustard, then add a lettuce leaf and two tomato slices. Top with the second mayo-topped bread slice (mayo side down). On this second layer add the remaining ham or turkey and the crispy bacon strips (2–3 slices of bacon per sandwich). Finish by placing another buttered slice (butter side out) on top, pressing gently but not squashing the filling. Repeat to make 3 sandwiches (each sandwich uses 4 slices of bread).
Trim and secure
Using a sharp serrated knife, trim off the crusts from each sandwich for a classic Regency Club presentation. Cut each sandwich diagonally into 4 triangles (or into halves, then quarters). Insert toothpicks through each stack and top each toothpick with a pickle slice for garnish. Wipe any excess mayo from the sandwich edges with a damp cloth.
