Prepare Glass & Base

Build the base

Choose a highball or large Collins glass (12–16 oz). Fill the glass about three-quarters full with ice cubes to chill the glass and keep the drink cold.

Pour 4 tablespoons Pimm's No.1 into the prepared glass. If you prefer a stronger gin-forward drink, add 1 tablespoon London dry gin and gently swirl to combine with Pimm's.

Add Fruit & Herbs

Add the cucumber slices, quartered strawberries, and the orange and lemon half-moon slices to the glass, pushing them gently into the ice so they sit throughout the drink. This releases light aroma and subtle flavor without muddling.

Tear the mint leaves lightly between your fingers to release oil and drop them into the glass. Do not muddle vigorously — Pimm's is a gently aromatic drink.

Top & Finish

Top the glass with 8 oz chilled ginger ale. Pour slowly down the side or over the back of a spoon to preserve carbonation and avoid frothing.

Stir gently once with a bar spoon to distribute flavors and lift fruit through the drink. Taste and adjust: for a lighter drink, add another ounce of ginger ale; for more Pimm's flavor, add 1/2 tablespoon more Pimm's.

Garnish with an extra sprig of mint and one or two additional cucumber or strawberry slices on top. Serve immediately with a straw or stirrer.
