Marinated Meat
Prepare and marinate
In a large bowl combine yogurt, ginger paste, garlic paste, red chili powder, turmeric, ground coriander, garam masala, salt, lime juice, slit green chilies, chopped mint, chopped cilantro and 1 cup fried onions (birista). Add the bone-in mutton pieces and coat thoroughly. Cover and refrigerate to marinate for at least 6 hours, ideally overnight (8–12 hours) so flavors penetrate the meat.
Partial cook the marinated meat
Set a heavy-bottomed pot (that will also be used for final dum) or a deep pan on medium-high heat. Add 2 tbsp oil and 2 tbsp ghee. Add 4 of the whole cardamom pods, 4 cloves, 1 cinnamon stick and 1 bay leaf and saute briefly until fragrant. Add the marinated meat (including marinade). Brown the meat for 6–8 minutes, stirring occasionally. Add 1/2 cup water, reduce heat to low, cover and simmer until the meat is about 60–70% cooked and juices are present (40–50 minutes depending on size). The meat should be mostly tender but not falling off bone. Remove from heat; keep the cooking liquid in the pot — this will flavor the final layers.
Rice and Parboiling
Rinse and soak rice
Rinse basmati rice under cold water until water runs clear to remove excess starch. Soak rice in cold water for 30 minutes, then drain.
Parboil the rice
Bring 6 cups water to a rolling boil in a large pot. Add remaining whole spices (4 cardamom, 4 cloves, 1 cinnamon stick, 1 bay leaf and mace if using) and 2 tsp salt. Add the soaked, drained rice and stir gently. Boil the rice until it is about 70% cooked — grains should be soft on the outside but still firm in the center (about 6–7 minutes). Drain the rice in a colander and set aside. Reserve the boiling pot water if you want to use for steaming vegetables or to adjust consistency later.
Cooking Base & Layering
Assemble layers
Preheat oven to 160°C (optional) or prepare stove-top dum. Ensure the pot with the partially cooked meat is ready. Spread half of the parboiled rice evenly over the meat in the pot. Sprinkle half of the chopped cilantro and mint, 1/2 cup fried onions, 1/2 tsp garam masala (optional), and drizzle 2 tbsp ghee. If using saffron, soak saffron threads in 4 tbsp warm milk; drizzle half over this rice layer along with a few drops of rose water and kewra if using. Add the remaining rice to form a top layer and repeat sprinkling chopped herbs, remaining fried onions, 2 tbsp ghee, the rest of the saffron-milk and a few drops of rose/kewra water. Scatter the remaining whole spices on the top if desired for aroma.
Seal and cook (dum)
Seal the pot with a tight-fitting lid. For a better seal, spread a thin layer of dough (flour + water) around the rim of the lid and place over the pot, or tuck a clean kitchen towel between lid and pot. Place the pot on a heavy tawa (griddle) over low heat to prevent direct high heat scorching the bottom. Cook on very low flame for 45–60 minutes to allow steam (dum) to finish cooking the rice and tenderize the meat fully. Alternatively, bake in a preheated oven at 160°C for 45–60 minutes. Avoid opening frequently.
Rest and finish
After cooking, turn off the heat and let the pot rest, sealed, for 10–15 minutes. Carefully remove lid to avoid hot steam. Using a wide, flat spoon, gently mix the layers from bottom upward to coat rice with juices and distribute meat evenly without breaking grains. Transfer to a serving dish or serve directly from the pot. Garnish with remaining fried onions, chopped mint and cilantro and lime wedges.
Garnish & Accompaniments
Serve kacchi biryani hot with raita (yogurt cucumber), boiled eggs or salad on the side. Offer lime wedges to squeeze over individual servings.
