Method
Buffet Salad Station
Rinse and spin-dry the mixed salad greens. Place in chilled serving pans or bowls and keep refrigerated until service.
Halve the cherry tomatoes and slice the cucumbers into rounds. Arrange cherry tomatoes, cucumber slices, shredded carrots, and sliced red onion in separate bowls for self-service.
Place assorted toppings (crumbled feta, toasted sunflower seeds, croutons) in small bowls with serving spoons next to the greens.
Hot Entrees
Roast Chicken
Preheat oven to 425°F (220°C). Pat the chicken pieces dry. In a bowl combine 6 tbs olive oil, minced garlic, lemon zest and juice, chopped rosemary, 3 tsp salt and 2 tsp black pepper. Rub the mixture all over the chicken pieces and arrange on sheet pans skin-side up with space between pieces.
Roast chicken in the preheated oven for 35–45 minutes, or until internal temperature reaches 165°F (74°C) and skin is golden and crisp. Hold in covered warm chafing dishes for buffet service or carve as required.
Braised Beef
Season beef with salt and pepper. Preheat oven to 325°F (160°C). In a large heavy Dutch oven, heat 4 tbs olive oil over medium-high heat. Brown beef in batches on all sides, then remove and set aside.
Remove beef, rest 15 minutes, then slice or shred for service. Strain braising liquid, skim fat, reduce on stove if desired to make a gravy, season to taste, and keep warm for service.
Hot Sides
While potatoes cook, warm the heavy cream with the butter and 4–6 minced garlic cloves in a small saucepan until butter melts (do not boil).

Arrange assorted mini desserts on platters in portions suitable for 60 guests (about 2 mini desserts per guest). Garnish platters with fresh berries and provide bowls of whipped cream for serving.
Keep delicate items chilled until service and replace platters as items are consumed to maintain presentation.
Beverage Station
Final Setup & Service
Arrange stations for smooth guest flow: salad, hot entrees with sides, bread, desserts, then beverages. Label dishes and provide serving utensils at each item. Keep hot items in induction or steam table wells and cold items on ice or refrigerated until service begins.
Plan staffing so attendants can replenish items, monitor temperatures (hot >140°F / cold <40°F) and maintain cleanliness throughout the service period.
