Prepare fish

Pat the fish fillets dry with paper towels. Trim away any skin or bones. Cut the fillets into uniform finger-shaped strips about 1 to 1½ inches wide and 3 to 4 inches long so they cook evenly.

Set up breading stations

Arrange three shallow dishes: one with the all-purpose flour seasoned with 1/2 tsp salt and 1/2 tsp black pepper; the second with the two beaten eggs mixed with 2 tablespoons milk (or water); the third with the breadcrumbs combined with garlic powder, onion powder, paprika, dried parsley, lemon zest (if using), and the remaining 1/2 tsp salt and 1/2 tsp black pepper. Stir the breadcrumb mixture to evenly distribute seasonings.

Preheat cooking oil or oven

If frying: pour about 1/4 inch of vegetable oil into a large skillet and heat over medium-high until it reaches 350°F (175°C) or a breadcrumb sizzles and turns golden in 10 seconds when dropped in. If baking: preheat oven to 425°F (220°C) and line a baking sheet with parchment; lightly oil the sheet or spray it with nonstick spray.

Working with a few pieces at a time, dredge each fish finger first in the seasoned flour, shaking off excess. Next, dip into the egg mixture, letting excess drip back into the dish. Finally press firmly into the breadcrumb mixture, coating all sides and gently compacting crumbs so they adhere well. Place breaded fingers on a wire rack or plate while you finish the rest.

For an extra-crispy double coat (optional): after the first breadcrumb coat, dip again in egg and coat a second time with breadcrumbs.

Cooking

Frying (preferred for crispness): Heat skillet oil as noted. Add fish fingers in a single layer without crowding (work in batches). Fry 2½–3 minutes per side, turning once, until golden brown and internal temperature reaches 145°F (63°C). Transfer to a paper towel-lined plate or a wire rack set over a sheet pan to drain. If oil gets too dark between batches, reduce heat slightly.

Baking (healthier option): Arrange breaded fish fingers on the prepared baking sheet. Lightly brush or spray the tops with the remaining 1 tbsp oil. Bake at 425°F (220°C) for 12–15 minutes, flipping halfway through, until golden and cooked through (internal temperature 145°F/63°C). For extra browning, broil 1–2 minutes at the end while watching closely.

Finishing and serving

Transfer cooked fish fingers to a serving platter. Serve immediately with lemon wedges and your choice of dipping sauces (tartar sauce, ketchup, or aioli). Sprinkle a pinch of flaky salt or chopped fresh parsley if desired.

Leftover storage: Cool completely, then refrigerate in an airtight container for up to 2 days. Re-crisp in a 400°F (200°C) oven for 6–8 minutes before serving.
