Prepare potatoes

Wash and peel the russet potatoes. Cut into 1/4–1/2-inch sticks for classic fries. Rinse the cut potatoes under cold running water until the water runs clear to remove surface starch.

Soak and dry

Place the cut potatoes in a large bowl of cold water and soak for 20–30 minutes (or up to 2 hours) to remove more starch. Drain and spread on clean kitchen towels or paper towels. Dry thoroughly — excess moisture will cause oil splatter and soggy fries.

Optional toss with cornstarch

If using cornstarch for extra crispiness, sprinkle 1 tsp cornstarch over the dried potato sticks and toss lightly until evenly coated.

Heat oil

Pour vegetable oil into a heavy-bottomed pot or deep fryer to a depth of about 3–4 inches (keep quantity to cover fries; ~900 ml should work for a medium pot). Heat oil to 325°F (160°C) for the first (blanching) fry.

First fry (blanch)

Working in batches, fry the potatoes at 325°F (160°C) for 3–4 minutes until they are cooked through but not browned. Remove with a slotted spoon and drain on a wire rack or paper towels. Let fries rest for 10–15 minutes (or refrigerate for up to 30 minutes) before the second fry.

Second fry (crisp)

Increase oil temperature to 375°F (190°C). Fry the blanched fries in batches for 2–3 minutes until golden brown and crisp. Remove, drain, and immediately season with 1 tsp salt and 1/4 tsp black pepper while still hot.

Make burger patties

Place 1 lb ground beef in a bowl. Add 1 tsp salt, 1/2 tsp black pepper, 1 tbsp Worcestershire sauce, 1/2 tsp garlic powder, and 1/2 tsp onion powder. Gently mix with your hands or a spoon until just combined — avoid overworking the meat. Divide into four equal portions (about 4 oz each) and form into patties about 3/4-inch thick, making a shallow dimple in the center of each patty with your thumb to prevent doming during cooking.

Preheat cooking surface

Heat a large skillet or cast-iron pan over medium-high heat. Add 1 tbsp vegetable oil and swirl to coat. The pan should be hot enough that a drop of water sizzles on contact.

Cook patties

Place the patties in the hot pan without crowding. Cook for about 3–4 minutes on the first side until a brown crust forms. Flip and cook another 3 minutes for medium doneness (adjust time ±1–2 minutes for rarer or more well-done). During the last minute of cooking, place a slice of cheddar on each patty and cover the pan briefly to melt the cheese.

Rest patties

Transfer cooked patties to a plate and let rest for 3–5 minutes to redistribute juices.

Prepare buns and vegetables

While patties rest, split the burger buns and spread about 1/2 tsp softened butter on each cut side. Toast the buns in a clean skillet or under a broiler until golden (about 1–2 minutes). Slice the tomato into 4 slices, slice the red onion into thin rings, and rinse lettuce leaves.

Assemble burgers

Spread mayonnaise and a little ketchup and mustard on the bottom bun (adjust to taste). Place a lettuce leaf, a tomato slice, the cheddar-topped beef patty, a few onion rings and two pickle slices. Top with the bun crown. Repeat for remaining burgers.

Condiments & Serving

Mix condiments: in a small bowl combine 1/2 cup mayonnaise, 1/4 cup ketchup, and 2 tsp mustard; taste and adjust. Transfer fries to a serving basket or plate alongside the burgers. Serve immediately while fries are hot and burgers are juicy. Provide extra ketchup or the prepared sauce on the side.
