Preparing the Fries

Wash and Cut Potatoes

Wash the russet potatoes thoroughly under running water. Cut each potato into long, thin strips to create fries.

Soak the Potatoes

Place the cut fries in a large bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and makes the fries crispier.

Dry the Fries

After soaking, drain the fries and pat them dry using a clean kitchen towel. Ensure they are completely dry to avoid splattering when frying.

Heat the Oil

In a large, deep pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small piece of potato in; it should sizzle.

Fry the Potatoes

Carefully add a batch of fries to the hot oil and fry for about 5-7 minutes or until golden brown and crispy. Avoid overcrowding the pot.

Drain the Fries

Using a slotted spoon, transfer the fried fries to a plate lined with paper towels to absorb excess oil. Sprinkle with salt while they are still hot.

Combine the Spices

In a small bowl, mix together the cumin powder, coriander powder, turmeric powder, paprika, garam masala, black pepper, chili powder, garlic powder, and onion powder until well combined.

Toss the Fries with Masala

In a large mixing bowl, add the hot fries and sprinkle the prepared masala seasoning over them. Toss well to coat the fries evenly with the spices.

Transfer the seasoned fries to a serving platter, garnish with fresh cilantro, and serve hot.
