Pizza Dough & Assembly
Prepare Oven and Dough
Preheat the oven to 500°F (260°C). If using a pizza stone, place it on the middle rack to heat for at least 45 minutes. Lightly flour a work surface with the all-purpose flour. Divide or use a 450 g dough ball and gently shape it into a roughly 12–14 inch circle by pressing from the center outward, leaving a slightly thicker edge for the crust. Transfer the shaped dough to a piece of parchment paper or a well-floured pizza peel.

Prepare Sauce (if using store-bought skip to assembly)
If making a simple sauce: combine crushed tomatoes (1 cup) with garlic powder (1 tsp), dried oregano (1 tsp), and sugar (1 tsp) in a bowl. Season with 1/4 tsp salt and 1/8 tsp black pepper. Stir to combine. Taste and adjust seasoning. Use 1 cup of the finished sauce for the pizza.
Sauce and Cheese Assembly
Spread an even layer of tomato pizza sauce (about 1 cup) over the stretched dough, leaving the 1/2-inch rim bare. Sprinkle the shredded mozzarella evenly over the sauce, covering almost to the edge but not on the crust so it can brown nicely.

Distribute the Canadian bacon slices evenly over the cheese. If slices are large, cut them into halves or quarters. Scatter the fresh pineapple pieces evenly across the pizza so each slice will have fruit. If the pineapple is very wet, pat dry with paper towels; reserve up to 2 tbsp of pineapple juice to mix into the sauce or discard. Sprinkle red pepper flakes over the top if you want a mild heat.
Optional step: heat a skillet over medium-high heat and sear the Canadian bacon for 30–60 seconds per side before placing on the pizza to render some fat and develop a light caramelization—this reduces excess moisture on the pizza and intensifies flavor.
Baking & Finishing
Bake the Pizza
Slide the pizza (on parchment or peel) onto the preheated pizza stone or baking sheet. Bake at 500°F (260°C) for 8–12 minutes, or until the crust is deeply golden and blistered in spots and the cheese is melted and beginning to brown. Rotate the pizza halfway through baking for even color.
Remove the pizza from the oven. Immediately sprinkle grated Parmesan (if using), the remaining 1/4 tsp salt and 1/4 tsp black pepper over the hot pizza. Tear and scatter fresh basil leaves on top for brightness.
Let the pizza rest for 2–3 minutes, then slice into 8 pieces and serve hot.
