Make the Marinade

In a blender, combine all the marinade ingredients: green onions, garlic, thyme, brown sugar, soy sauce, allspice, cayenne pepper, black pepper, salt, lime juice, vegetable oil, and the whole scotch bonnet pepper. Blend until smooth.

Marinate the Chicken

Place your choice of protein (chicken, pork, or tofu) in a large bowl or resealable plastic bag. Pour the marinade over the protein, ensuring it is fully coated. Seal the bag or cover the bowl and refrigerate for at least 2 hours, preferably overnight.

Cook the Protein

Preheat your grill or oven to medium-high heat. Remove the protein from the marinade (discard the leftover marinade) and cook until the internal temperature reaches 165°F (74°C) for chicken or pork, or until heated through for tofu. This should take about 6-8 minutes per side on the grill.

Let the protein rest for a few minutes before slicing. Serve with rice and peas or a fresh salad.
