Yum Yum Sauce

    Make the sauce

    In a medium bowl, combine 1 cup mayonnaise, 3 tablespoons ketchup, 2 teaspoons rice vinegar, 1 teaspoon granulated sugar, 1 teaspoon paprika, 1 teaspoon garlic powder, 1 teaspoon onion powder and 1 teaspoon soy sauce. Whisk until smooth and homogenous.

    Taste and adjust: if the sauce is too thick, whisk in up to 1 tablespoon water, 1/2 tablespoon at a time, until you reach desired consistency. If it needs brightness, stir in 1 teaspoon fresh lemon juice. Adjust salt or sugar to taste.

    Cover and chill for at least 15 minutes to let flavors meld (can be made up to 24 hours ahead and stored refrigerated in an airtight container).

Tater Tots

    Cook the tots (oven method)

    Preheat oven to 425°F (220°C). Line a rimmed baking sheet with foil and place a wire rack on top if available for crispier tots. Arrange 24 frozen organic tater tots in a single layer on the rack or sheet, leaving a little space between each.

    Lightly brush or spray the tots with up to 1 tablespoon neutral oil, then evenly sprinkle with 1 teaspoon kosher salt and 1 teaspoon freshly ground black pepper.

    Bake for 20–25 minutes, turning once halfway through (around 10–12 minutes), until tots are golden brown and crisp. Cooking time may vary by brand and oven — bake until exterior is crisp and interior is hot. If you prefer softer centers, shorten time slightly.

    Alternate cook method: Air fryer

    Preheat air fryer to 400°F (200°C). Place tots in a single layer in the basket (cook in batches if needed). Air-fry for 12–15 minutes, shaking basket halfway through, until crisp and golden.

    Alternate cook method: Shared fryer note

    If using a commercial deep fryer, note that the fryer is shared and may contain gluten and other allergens. Fry according to fryer instructions until deeply golden (about 3–4 minutes) and drain on paper towels before serving.

    Transfer cooked tots to a serving platter. If desired, sprinkle with optional garnishes: 2 tablespoons thinly sliced scallions and 1 teaspoon toasted sesame seeds.

To Serve

    Place a small bowl of chilled yum yum sauce alongside the tots for dipping, or lightly drizzle sauce over tots just before serving. Serve immediately while tots are hot and crisp.

    Yum Yum Tots serve best hot; leftover tots can be reheated in a 400°F (200°C) oven for 6–8 minutes or in an air fryer for 3–5 minutes to re-crisp.
