Method
Prepare Blueberry Purée
Cook and mash
Place 1 cup blueberries, 2 tablespoons sugar and 1 tablespoon water in a small saucepan over medium heat. Cook, stirring occasionally, until the berries break down and the mixture is syrupy, about 6–8 minutes.
Finish purée
Remove from heat, stir in 1 teaspoon lemon juice. For a smooth swirl, press the mixture through a fine-mesh sieve into a bowl to remove skins and seeds. If you prefer texture, reserve some mashed whole berries and skip sieving. Let cool to room temperature, then chill in the refrigerator while you prepare the ice cream base (about 15–20 minutes).
Make Ice Cream Base
Combine liquids
In a medium mixing bowl, whisk together 1.5 cups heavy cream, 3/4 cup whole milk, 1/2 cup granulated sugar, 1 teaspoon vanilla extract and 1 teaspoon fine salt until the sugar is mostly dissolved.
Optional stabilizer
If using cornstarch for a slightly firmer texture, mix 1 teaspoon cornstarch with 1 teaspoon cold water to make a slurry. Warm 1/4 cup of the milk in a small saucepan until just warm, whisk in the slurry, then return to the larger milk mixture and whisk thoroughly. This step helps prevent iciness if you won't use an ice cream machine.
Chill base
Cover the base and refrigerate for 15–20 minutes until chilled. Chilling ensures a quicker freeze and smoother texture.
Assemble Popsicles
Layer and swirl
If you have an ice cream maker: churn the chilled base according to the manufacturer's instructions until thickened (soft-serve stage). If you do not have an ice cream maker: whisk the chilled base vigorously for 1 minute, then pour into molds and use the freezer-and-stir method (see note). To assemble, spoon or pour a thin layer of the ice cream base (about 1–2 tablespoons) into each popsicle cavity. Add 1 teaspoon blueberry purée or some mashed berries, then add another layer of base. Repeat to fill the mold about 90% full, alternating base and purée to create a marbled effect. Use a skewer to gently drag through layers to enhance the swirl pattern. If using optional chopped freeze-dried blueberries or crushed biscuits, sprinkle 1/2 teaspoon into each mold as you layer for texture.
Insert sticks and freeze
Tap molds on the counter to remove air bubbles. Insert popsicle sticks or attach mold lids with sticks. Freeze upright for at least 6 hours, preferably overnight, until fully set.
Unmold and Serve
Notes on freezer-and-stir method (no ice cream maker): pour the chilled base into a shallow metal pan and freeze for 30–45 minutes until edges begin to set. Stir vigorously with a fork or whisk to break up ice crystals, return to freezer and repeat every 30 minutes for 2–3 cycles until thickened, then proceed to assemble into molds with blueberry purée as above.
