Prepare the Grapes
Harvest the Chardonnay and Sauvignon Blanc grapes. Remove stems and any spoiled grapes. Rinse the grapes thoroughly under cold water.
Crush the Grapes
In a clean fermentation bucket, crush the grapes to release their juices. You can do this by hand or with a grape crusher.
Add Sugar and Water
Dissolve the sugar in 1 liter of water and pour it into the fermentation bucket with the crushed grapes.
Add Yeast
Sprinkle the wine yeast evenly over the grape mixture and stir gently to combine.
Fermentation
Cover the fermentation bucket with a clean cloth and let it sit in a cool, dark place for about 1-2 weeks. Stir the mixture daily.
Press the Wine
After fermentation, press the mixture through a wine press or cheesecloth to separate the liquid from the solids.
Add Sulfur Dioxide
Dissolve the sulfur dioxide in a small amount of water and add it to the pressed wine to prevent spoilage.
Bottle the Wine
Transfer the wine into clean, sterilized bottles and seal them with caps or corks.
Aging
Store the bottles in a cool, dark place for at least 3-6 months before tasting.
