Harvest the Grenache, Cinsault, and Syrah grapes. Remove stems and crush them to release the juice.

Prepare the Grapes

In a large fermentation vessel, combine the crushed grapes with water, sugar, and acid blend. Stir well to dissolve the sugar.

Creating the Must

Sprinkle yeast over the must and gently stir to incorporate. Allow to sit for 15 minutes.

Adding Yeast

Cover the fermentation vessel and let it sit for 5-7 days, stirring daily until fermentation is vigorous.

Fermentation Process

After fermentation, press the grapes to extract the juice. Transfer the juice into a clean fermentation vessel.

Pressing the Wine

Add crushed Campden tablet to the juice to stabilize it. Allow it to ferment for another 2-4 weeks, checking for clarity.

Secondary Fermentation

Once fermentation is complete and the wine is clear, siphon into clean bottles, leaving some space at the top. Seal with corks.

Bottling

Store the bottles in a cool, dark place. Let age for at least 3 months before tasting.
