Assemble condiments
Spread the softened butter evenly on the outside face of both bread slices (these will toast against the skillet). On the inside face of one slice, spread the Dijon mustard; on the inside face of the other slice, spread the mayonnaise. This gives a balanced tang and creaminess.

Layer the fillings
Place one slice of cheddar cheese on the mustard-spread inside of one bread slice. Top the cheese with all four slices of deli ham, arranging so they overlap slightly. Add the optional pickle slices on top of the ham if using. Finish with the second slice of cheddar cheese and close the sandwich with the mayonnaise-spread bread slice (butter side out).

Toast the sandwich
Heat a nonstick skillet or griddle over medium-low to medium heat. Place the sandwich in the skillet and cook for 3–4 minutes, pressing gently with a spatula. When the bottom is golden-brown and the cheese begins to melt, flip carefully and cook the other side 3–4 minutes until golden-brown and the cheese is fully melted. If the bread is browning too quickly before the cheese melts, reduce the heat to low and cover the skillet for 1–2 minutes to help the cheese melt through gentle steam.

Finish and serve
Remove the sandwich from the skillet and let it rest 1 minute. Slice in half diagonally if desired. Season the cut sides with a little black pepper to taste and serve immediately.
