    Prepare bacon and toast bread

    Cook the bacon: in a skillet over medium heat, cook the 6 bacon strips until crisp, turning occasionally, about 8–10 minutes. Transfer to a paper towel-lined plate to drain. While bacon cooks (or in a separate pan/toaster), spread 2 tbs softened butter thinly on one side of each of the 6 bread slices and toast in a skillet or toaster until golden and crisp, about 2–3 minutes per side in a skillet or 3–4 minutes in a toaster. Set toasted bread aside, buttered side out.

    Prepare tomato and seasonings

    Slice the tomato into thin rounds (about 1/4-inch). Lightly season tomato slices with 1/4 tsp salt and 1/8 tsp black pepper. Pat excess moisture from tomato slices with a paper towel to avoid soggy bread.

    Assemble first layer (bottom to middle)

    Lay three slices of toasted bread on your work surface, buttered side down. On the first slice, spread 1 tsp mayonnaise evenly. Top with about 2 oz (approx. half of the turkey) of sliced turkey (arrange evenly), then 2 pieces of crisp bacon placed across the meat, and 1 lettuce leaf. Add the second slice of toasted bread on top of that assembly, buttered side down.

    Assemble second layer (middle to top)

    On the middle slice (now the top of the first layer), spread 1 tsp mayonnaise and 1 tsp Dijon mustard if using. Top with the remaining 2 oz turkey and all 4 oz of ham (arrange evenly), then add the tomato slices (drained) and the remaining 1 lettuce leaf. Spread 1 tsp mayonnaise on the remaining slice of toasted bread and place it buttered side up to finish the top.

    Finish and cut

    Press sandwich gently to compress the layers slightly. Secure the sandwich with toothpicks at each quarter (1 toothpick per corner) to hold layers together. Using a sharp serrated knife, trim off crusts if desired and cut the sandwich diagonally into 4 triangles (cut in half, then each half diagonally to create classic club triangles) or into 2 halves for larger portions.

    Serve

    Plate the sandwich triangles, inserting a pickle chip or spear on the side and adding any remaining bacon or lettuce as garnish. Serve immediately while toasted and crisp.
