Prepare the Ingredients
Gather all the ingredients listed for the Taco Skillet. Chop the grilled onions, poblano peppers, cilantro, and spring onions. Slice the serrano chiles for garnish.
Cook the Proteins
In a skillet over medium heat, add a little oil and cook the lime steak, chicken breast, or al pastor pork until cooked through. This should take about 7-10 minutes depending on the protein chosen. Season with salt and pepper to taste.
Sauté the Vegetables
Add the grilled onions and poblano peppers to the skillet with the protein and potatoes. Cook for an additional 5 minutes until the vegetables are tender.
Assemble the Skillets
Warm the corn tortillas in a dry skillet for about 1 minute on each side. Place the tortilla on a serving plate and layer it with the protein and vegetable mixture. Top with cotija cheese, a drizzle of chile morita aioli, and garnish with cilantro, spring onions, sliced serrano chiles, and a sprinkle of chile con limon.
Optional Queso Frito
If desired, add a portion of queso frito on top of the assembled skillet for extra flavor.
