Pancakes
Prepare batter
In a medium bowl whisk together flour, sugar, baking powder, baking soda, and salt until evenly combined.
In a separate bowl whisk buttermilk, 1 large egg, and melted butter until blended.
Make a well in the dry ingredients and pour in the wet ingredients. Stir gently until just combined — small lumps are okay. Do not overmix or batter will be tough. Let rest 5 minutes while you heat the griddle.
Cook pancakes
Heat a nonstick griddle or large skillet over medium heat (about 350°F / 175°C). Brush lightly with vegetable oil or a little butter. For each pancake, pour about 1/3 cup batter onto the hot surface, leaving space between pancakes. Cook until bubbles form on the surface and edges look set, about 2–3 minutes. Flip and cook 1–2 minutes more until golden and cooked through. Transfer to a warm plate and keep loosely covered while you finish remaining pancakes.

Cook sausage links
In the same or separate skillet over medium heat, add the sausage links. Cook, turning occasionally, until browned on all sides and cooked through (internal temperature 160°F / 71°C), about 8–10 minutes. Transfer to the plate with the bacon and keep warm.

Prepare eggs your way
Use the method for eggs you prefer (over easy/medium/hard, scrambled, or sunny-side up). For fried/over eggs: heat a nonstick skillet over medium-low and add 1 tsp butter or oil. Crack eggs into skillet. Season with salt and pepper. For sunny-side up, cook gently until whites are set and yolks still runny, about 2–3 minutes. For over-easy, cook until whites set then flip gently and cook 10–20 seconds more. For over-medium, cook 30–45 seconds after flipping. For scrambled, whisk eggs, pour into pan, and stir gently until soft curds form. Keep eggs warm until plating.
